Ube is a purple yam popular in the Philippines ๐Ÿ‡ต๐Ÿ‡ญ On top I placed meringue and coconut ๐Ÿฅฅ shards and coconut jellies. Grab a date ๐ŸŒด and do the polka! This is my grandmaโ€™s Polka Dater bar cookie which I spoke about on our #flourhour  podcast. Itโ€™s a cookie with a texture that is verging on cake with walnuts, chocolate ๐Ÿซ and of course dates. I donโ€™t know the history but these cookies ๐Ÿช feel very California to me especially if you use @ghirardelli chocolate. Happy baking!
